Sweet Bundi

Today's  recipe  is  Sweet  Bundi. 

Sweet Bundi

Ingredients:


1 cup besan(gramme flour)
3/4 cup water
1 teaspoon oil
pinch baking soda
2 cup sugar
1.25 quarts of water
few saffron strings
1 tsp cardamom powder

1. Pass besan through sieve.

2. Add 1 tsp of oil, mix it properly.

3. Gradually add water to form a smooth dough.

4. The dough should have a running consistency and not be too thick or too thin.

5. Take a 10-minute break.

6. Measure out 2 cups of sugar.

7. Pour in 1 1/4 cups of water.

8. Put it to boil. Boil it till the sugar syrup becomes sticky. You can test it by putting it between your index finger and thumb. If it makes a single string, it's ready.

9. Add saffron and cardamom powder.

10. Now take the besan dough and add a pinch of baking soda to it.

11. Stir it vigorously in the same direction.

12. Now take a frying pan and add oil to fry Bundi.

13. Maintain a medium flame, place a grater on the pan, and gradually pour the dough slowly in a round direction

 
14. You will see a small, small round Bundi falling into the pan.

15. Hold the grater and put the batter in till there is space in the pan. 

16. Let it fry for a few minutes, then make the flame low and then take out the bundis and put it directly in the sugar syrup and stir it.

17. Make bundis from the remaining batter same way and soak it in sugar syrup.

 18. Let it soak for at least 10 minutes.

19. After 10 minutes, put it in a strainer and strain the extra syrup.

20. You will find the bundi a little sticky, but within a few minutes it will soak up the remaining syrup and be ready to eat.

21. You can use this strained syrup in any other recipe.
