Sev

Hi everyone, 


Not written since long time.
Hope you all enjoyed staying with family during lockdown. In few places lockdown is still on and people are working from home. This recipe is perfect for odd time munching.

Today I am writing about very famous and easily available snacks
Sev. .. generally we use it in Bhelpuri and also quite common to eat with puffed rice, lovingly called "Sev mamra"

Ingredients:

2 cup besan

3 cups oil (including for frying)

1 tsp. Turmeric

Salt as per taste.


Take a big bowl, add besan, 3 tbsp oil
Turmeric and salt as per taste. Mix everything nicely. Make soft dough pouring water.
Now take 1/3rd of dough, add 2 to 3 tsp water and start making soft and smooth dough by pressing with hands.
It will become light in colour and very fluffy. Add it to sev maker. Famously called sancho
Take a big pan, add remaining oil, and heat it. Add a small ball of dough in boiling oil if it comes up quickly, oil is perfectly heated.
Add sev to oil with help of sev maker. We have to make it yellow and crispy. Fry it carefully as it becomes red very fast.

Same way make sev out of remaining dough. It is easy and quick recipe, once you start making, its just half an hour job.
