Undhiyu

 

Hi, 

Today's recipe is Undhiyu.

Undhiyu is a winter special since the vegetables used for making Undhiyu are only available during winter, especially green vaal, green tuver and surti papdi. Without these three vegetables, Undhiyu becomes a regular mixed vegetable dish.

Making Undhiyu requires a lot of time and needs a lot of patience, but once it is prepared, you will love it!!

We Gujratis are very fond of Undhiyu. So much so that Undhiya-puri and a sweet to go with it becomes one fancy meal for us. 

In Gujrat, we love to celebrate makar sankranti with Undhiya party on the terrace.

Let's start with ingredients:


Ingredients for Undhiyu

6 Potatoes medium size

2 raw banana

6 small Brinjals

1/2  kg.Surti papdi

1/2  kg. Indian Yam(suran)

1/2  kg Purple yam(kand)

1/2  kg.Sweet potato(yams)

1/2  kg.pigeon peas seeds(Tuver)

2 pinches of Baking soda

1/2 tsp asafoetida

Salt to taste 


Ingredients for Muthiya:

1 bunch Methi

2 cups Wheat flour

2 tbsp gram flour

1 tsp Turmeric 

1 tsp chili powder. 

1/2 tsp asafoetida

1 tsp sugar

1/2 cup oil

Pinch of baking soda

Salt to taste 


Green masala ingredients:

A big bunch of Green Coriander

1 Coconut

Bunch of green garlic

6 tbsp Dhana jeeru

4 tbsp Ginger paste

4 tbsp Green chili paste

2 tbsp sugar

3 lemons

Salt as per taste

Methi muthia: 

1. Take the bunch of green methi leaves. Clean it, pick the methi leaves and wash thoroughly.

3. Add salt and mix properly.

4. Rest it for 10 minutes

5. After 10 minutes, squeeze the leaves and take it to another deep vessel.

6. Add wheat flour, gram flour, salt, sugar

Turmeric, chili powder,

7. Add chili and ginger paste.

8. Add pinch of baking soda.

9. Add 1/4 cup oil

10. Mix everything, make soft dough.

11. Make 18 to 20 small parts and give it oval shape by using your palms.

12. Fry it on medium flame till it turns brown.

13. Take it out on tissue paper and put it aside.

Green masala

1. Add finely chopped coriander in a bowl.

2. Add grated coconut, sugar, lemons, Coriander cumin powder, chili ginger paste, finely chopped green garlic and Salt to taste

7. Mix everything well with your hand and keep it aside.


Recipe for Undhiyu.

1. Peel surti papdi and cut vertically

2. Peel potatoes, make cross slits on it.

3. Make same way cross slits on brinjals and bananas. Do not peel banana, just make 7 equal parts.

4. Stuff green masala in to potatoes, brinjals and banana and keep aside.

5.Peel yam, purple yam,and sweet potatoes. Make small equal pieces.

6. Fry purple yam as it is sticky.

7. Mix surti papdi, tuver dana, yam and sweet potatoes and half of green masala in a bowl. Let it rest for few minutes.

8.Take a deep frying pan, add 2 cups oil.

9. Add 1/2 tsp asafoetida and pinch of baking soda.

10. Add surti papdi and let it cook for a while, add all the greens mixed in the bowl.

11. Add potatoes, brinjal and sweet potatoes.

12. Add green chili and ginger paste.

13. Add salt to taste.

14. Cover it with lid and keep on very low flame.

15. After 15 minutes,add muthiya, purple yam and banana on top.

16. Let it cook on very low flame.

17. Stir it occasionally, just by moving and shaking the pan, without disturbing the veggies, as they will break with the use of spoon or spatula.

18. It takes upwards of 60 minutes to cool, so one must be patient.

19. Garnish with green coriander and grated coconut.

20. Serve it with puris or by itself, since undhiyu is one pot full meal.
