Bangan bhartha

 


Hi everyone,

Today's recipe, Bangan bhartha, winter special, famously called Olo in Gujrat and bhartha in north india.

While buying Bangan for bhartha try to get big one with shiny skin so there will be less chance of having seeds in it.

Bangan bhartha

Ingredients:
500 gms Bangan
3 tbsp oil
1/2 tsp hing
1 tsp Turmeric
1 tsp red chili powder
2 pieces Onions
2 pieces Tomatoes
1 tbsp Garlic paste
1 tbsp Ginger paste
Salt to taste

1. Roast Bangan directly on flame.
2. Let it cooldown
3. Peel it and chop finely
4. Add oil to frying pan, add hing, turmeric, red chili powder and then add finely chopped onion.
5. Add salt to taste.
6. Roast onion till it turns light pink.
7. Add finely chopped tomatoes and roast it properly.
8. Add garlic and ginger paste.
9. Add chopped Bangan in it.
10. Cover it and let it cook for 5 to 10 minutes.
11. Delicious spicy Bangan bhartha is ready.
12. Best served with Bajri no rotlo and garlic chutney.
