Shevaiya kheer

 


Hi, today I am here with a very simple but delicious recipe.....Sevaiyan kheer

In Urdu, Vermicelli noodles are called sevaiyan which is widely used in cooking all over the world.

This delicious kheer is combination of wheat vermicelli and milk and gets ready in just few minutes. 


Ingredients:

1 ltr Milk

2 tbsp Ghee

1 cup broken sevaiyan

Half cup Sugar

Some saffron strands

1/2 tsp Cardamom powder

6 to 7 Almonds

6 to 7 Cashews

Few Raisins


1. Heat 2 tablespoon ghee in a heavy bottom pan

2. Add 1 cup broken sevaiyan or vermicelli

3. Roast shevaiya stiring continuously  on a low to medium-low flame. 

 4. Roast it  on medium flame till the sevaiyan strands turn golden brown

5. Pour milk in the pan. milk can be of any temperature.

6. Mix properly

7. Boil milk on a low to medium-low flame. Stir occasionally so that the milk or seviyan does not stick to the bottom of the pan.

8. Once the milk comes to a boil, then add sugar.Mix very well so that all the sugar dissolves

9. Add saffron strands. mix and stir

10. Add sliced almonds an chopped cashews and Raisins.Keep some aside for garnishing.

11. Then add cardamom powder. Keep some aside for garnishing.

12. Mix properly and let it cook for 5 minutes more or till the vermicelli gets cooked and the milk thickens. When the vermicelli has softened and cooked well, the kheer will look thicken and creamy. 

13. Last but not least, don't forget to scrape the sides of the pan where milk solids will be collected and add them to the vermicelli kheer

You can serve vermicelli kheer hot or warm or chilled with or without meal.
