Basundi

hope you all are fine and must be enjoying working from home. Also enjoying quality time with family.

Now that Diwali is here, we will welcome Diwali with Traditional Indian sweet Basundi.

Today's recipe is Basundi

Basundi is a rich Indian dessert made using milk which is reduced until it thickens and then it is further flavored with a few more ingredients. Here is how to make it at home.

Ingredients:

1 ltr. Milk
1/2 cup sugar
1 condensed milk
Pinch of Saffron
1/4 tsp. Cardamom powder
1/2 cup Almonds

Heat milk in a heavy bottom pan, When milk is almost reduced to half, add sugar, cardamom powder, and condensed milk to it.

Add saffron to little milk , dilute properly and add it to milk.
Keep some aside for garnishing.

Chop very thin almonds slices, add some to milk and keep some for garnishing.


Let milk cooldown. Pour it to serving bowl. Garnish with saffron and thin slices of almonds.

Basundi is basically thickened milk flavored with cardamom powder and saffron. It is served on its own or with puri.

Basundi remains good for 3 to 4 days in fridge. If you pour it in to Ice trey or kulfi cones and put it to freezer for 4 to 5 hours you will get delicious kulfi. Generally people eat Basundi one day then make kulfi out of it and enjoy it next day after dinner.
