Today's recipe is Handvo.
Handvo - a traditional gujarati savory cake made with rice, lentils and lots of vegetables like bottle gourd, fenugreek leaves and carrot.
INGREDIENTS:
2 cup rice
1/2 cup tooverdal (Split Pigeon Peas)
1/4 cup Dhuli moong dal (Split Green gram)
1/4 cup chana dal (Split Bengal gram)
1/4 cup urad dal (split black gram)
1/2 cup Sour curd
5 tbsp Oil
2 tsp Sugar
1 tsp Turmeric powder
2 tsp Red chilli powder
1 grated Carrot
1 cup grated bottle gourd
1/2 tsp ginger paste
2 Bay leaves
1 Dried red chillies broken
1/2 tsp Asafoetida (hing)
2 Cloves
1 tsp Mustard seeds
8-10 Curry leaves
1/2 tsp Soda bicarbonate
1 tbsp Lemon juice
1 tsp Sesame seeds
Salt to taste
Soak the rice with all the dals in 5 cups of water for 5 hours. Drain. Grind the grains to a coarse paste and add enough water to make a batter of medium thick consistency. Add sour curd, cover the batter and leave to stand in a dark place for at least 5 hours to ferment.
Once fermented, add salt, sugar, turmeric powder, red chilli powder, carrot, bottle gourd, ginger paste to the batter. Add soda, and lemon juice. Mix everything well.
Preheat oven at 180°C. For 15 minutes
Pour the batter into greased a oven tray.
Take a small pan , add oil, heat it. Add mustard, hing, bay leaves, red chillies cloves and curry leaves. Lastly add sesame seeds.
Spread this tadka on the oven trey, on batter and bake in the preheated oven for 20 to 25 minutes or till the crust is deep golden. Cut into square pieces and serve.
This is quite easy and quick to make recipe with delicious taste.
While going through the recipe, you might find the process slightly tedious but once you start, it is hardly a half an hour job.
Serve with masala tea or masala butter milk. It is full meal in itself.
