Aloo beans subji

Today's recipe is Aloo beans subzi.
This recipe is very quick and easy to make, and also very delicious. It does not require much of ingredients, just day to day masalas are enough.

Beans are a rich source of protein, complex carbohydrates, folate, and iron. Beans also have significant amounts of fibre and soluble fibre which can help lower blood cholesterol.


INGREDIENTS:
500 gms beans
2 potatoes
2 tbsp oil
1/2 tsp Mustard seeds
1/4 tsp Hing
1/4 tsp Carom seeds (ajwain)
1/4 tsp Turmeric powder
1/4 tsp Red chilli powder
1/2 tsp Coriander cumin powder
1/2 tsp Sugar (optional)
Small pinch soda
Salt to taste

Cut beans finely. Peel raw potatoes and cut in small pieces.
Take a pan and add oil, heat it. Add Mustard seeds and when it starts bursting add hing and very little soda then add tumeric. Add chopped beans and potatoes into the pan. Add salt and red chilli powder. Mix everything properly. Add water up to the level of beans in the pan. Cover with lid.
Cook till all the water is absorbed by beans. Stir occationally. Once all water is absorbed, add sugar and coriander cumin powder. Mix properly and let it cook for 5 more minutes. Your delicious Aloo beans subji is ready.

Aloo Beans is also a filling and delicious side dish to accompany rice-dal or rice-sambar combination. Apart from these combinations, as Aloo beans is a dry vegetable, many times in absence of dal or sambar it can nicely go along with a cooling and comforting accompaniment like Raita.
