Today's recipe is Dum Aloo.
Dum Aloo is a very delicious Indian dish generally made from baby potatoes, slow cooked in a spicy gravy. ... Dum Aloo is one of the very famous potato curries in the Indian menu.
The dish is also quite popular in dry curry form and more than a dozen variations of the dish exist in different Indian states and regions.
INGREDIENTS:
15 small potatoes
15 cashewnuts
2 onions
3 tomatoes
1 tsp ginger garlic paste
1 tsp turmeric
1 tsp red chilli powder
1 tsp garam masala
1/4 tsp hing
1 bay leaf ( Tej patta)
2 clove
2 cardamon
2 cinnamon
2 tbsp curd
1 cup Oil for frying
Salt to taste
Boil Potatoes adding salt, peel off. Make small holes on all four sides.
Take a pan, add oil, fry potatoes till it turns brown. Take it out and, add bay leaf, clove, cinnamon, cardamom and hing, add chopped onion and start roasting. After 2 minutes add chopped tomatoes. Add turmeric, red chilli powder and salt . Add ground cashewnuts. Mix everything well. Add garam masala. Let it cook for few minutes more. Let it cool down. Take out bay leaf and pour everything in to blender, add little water and make semi solid paste.
Pour mix into a deep pan. Add a cup of water and bring it to boil. Add boiled potatoes one by one and bring it to boil. Add salt, ginger garlic paste and stir carefully. . Cover with lid and let it cook for approximately 10 minutes. Add curd and cook for 2 minutes.
Your tasty Dum aloo is ready.
The potatoes in this dish are traditionally deep fried, but I have shallow fried them to keep them healthier. You can fry them whichever way you like.
You can serve with Rice Roti or Nan.
