Today's recipe is Farsi puri.
Its crispy and crunchy, you can have it anytime. In old time it was considered as exclusive snack, prepared only for festivals. This deep fried snacks taste best with masala tea and is quite filling.
FARSI PURI
INGREDIENTS
2 cups plain white flour or maida
2 tbsp semolina or Rava or suji
2 tbsp ghee / butter
1/4 half crushed black pepper
1/4 roasted cumin powder
Salt to taste
2 cups oil for frying.
Take maida and suji in deep bowl, add ghee and mix thoroughly.
Add pepper, cumin powder and salt.
Add water slowly and make a stiff dough.
Rest it for 15 minutes.
Make 20 to 25 equal balls and start rolling puris. Make small small holes with help of forks. Let it dry for 15 minutes .
Add oil to deep frying pan and let it heat.
Once you see little smoke coming out, add a small piece of dough to check whether oil is ready or not. If dough comes up quickly, oil is ready for frying.
Add puries one by one and then turn flame to simmer. You can fry 3 to 4 puries at a time. Fry all puries like that and let it cool down.
Your crispy and crunchy farsi puri is ready.
Its best companion is ginger tea.
It tastes awesome with masaledar ginger tea.
