Today's recipe is specially for my facebook friends.
MOHANTHAL
INGREDIENTS:
500 gms Besan
500 gms sugar
500 gms ghee
1/2 tsp cardamom powder
1/2  tbsp grated almond
5/6 strings of saffron
1/2 cup milk.
Take besan and put it in deep bowl.
Mix 1/2 cup ghee with 1/4 cup milk. Heat it on flame. Let it boil and pour slowly as required for the besan. Start mixing it into the besan till its colour turns yellow.
In simple language its called "dhrabo".

Mix everything well and Let it pass through a sieve.
Take a deep pan and pour ghee in it. Let it heat. Add besan and roast it properly till it turns light brown. Add grated Almond  and cardamom powder. Mix everything well. Keep aside and let it cool off.
Take a pan, add sugar and add water. Wait for 10 seconds and remove the water, in order to wash the sugar. Again fill up water till sugar level or little more, and bring to boil. Let it boil till it turns in to sugar syrup with a single string. You can check it by testing a drop between your thumb and index finger. If it is clear and makes a single string, you are good to go. Add saffron and let it cooldown.
Let roasted besan also cooldown. Add
Sugar syrup and mix it throughly.
Keep this aside for atleast 20 to 25 minutes.
Pour it into a greased tray,and let it set for 15 minutes. Garnish with grated almonds. Make small pieces, wait till it cools down completely. Take out pieces very carefully, they tend to break.

It is a Gujrati mithai, I know students will not take the pains of making it.
