Today I am writing about Ghughra.
It is one of the most loved Diwali sweet.
Ghughra
INGREDIENTS:
2 cups maida
1 cup suji
1 cup grated sugar
1 cup desiccated coconut
1/4 cup grated almonds
1/4/cup grated cashewnuts
1/4 cup raisin
2 cups ghee to fry.
Take a pan. Add maida, add 1 tbsp ghee and water as required, and knead a hard dough.
Cover with a wet cloth and let it rest for 15 to 20 minutes. Meanwhile we can prepare the stuffing for Ghughra.
Take a pan add 2 tbsp ghee and heat it. Add suji and roast it till it turns pink. Let it cool down.
After 20, 25 minutes when it Is completely cold, add coconut, sugar and all dry fruits. Mix thoroughly. Rest for 5 minutes.
Take the maida dough and make 20 equal balls. Roll it with the help of a pin and make small puris. Add half tbsp suji stuff between puri and press one side of puri with the other side. Press border with fingers and turn inward. Seal it full like this. It will give a beautiful necklace like look to the ghugara. If you do not want to take so much efforts, simply buy Ghughra maker from market. It is easily available. Make all Ghugara one by one and keep it ready to fry.
Take a deep frying pan,add remaining ghee and heat it. When you see little smoke coming out ,add ghugara one by one. Turn flame to medium. You can add four to five ghugara at a time.
This is most favourite sweet dish for Diwali. In marathi it is called Karanjiya and it is a must have for the festive season.
In UP they call it Gujiya, they make it during Holi festival.
