In India, summers are pretty warm but also the best times of the year. Yes, you’re right, it is the season of mangoes! Mangoes are the most awaited fruit of the year for most people in India. We love our mangoes and we use them for making a lot of delicacies. We make pickles, we make shakes, but what do I say about Alphonso mango? They are the BEST.
Today I thought of writting about
'Kerigol nu shaak' means Sabzi made from raw smango.
INGREDIENTS:
3 cups small cut raw mangoes
1 cup small cut jagerry
3 tbsp oil
1/2 tsp mustard
1/4 tsp hing
2 tsp tumeric
2 tsp chilli powder
2 tsp cumin corriander powder
1 red chilli whole
4 cloves
4 medium cinnamon sticks
1 bay leaf or tej patta
Salt to taste
Take a pan, add oil, add mustard,
When it starts brusting, add hing, tej patta, clove, cinnamon sticks and whole red chilli. Add turmeric and then add small cut mangoes. Add salt to taste. Let it cook, covered with a lid. Stir occasionally.
When you feel that mango is almost cooked, add jaggery. Stir thoroughly. Let it cook for 5 more minutes.
Allow it to cooldown.
After 1 or 2 hours, add red chilli powder and cumin corriander powder. Stir thoroughly. Your delicious 'kerigol nu shaak' is ready.
This is a type of pickle.
You can have it with any meal.
It goes with any food.
You can store it in refrigerator for at least 6 months. It remains fresh and fit to consume.
