Dahi vada

Hope you all fine.
Today's recipe is Dahi vada.

Its very tasty and easy to make.
If you are inviting friends over lunch or dinner, this is ideal as you can start preparing the previous day, so there isn’t a lot of pressure.

INGREDIENTS:

2 cup urad dal (white)
3 cups oil for frying
1/4 tbsp ginger
1/4 tbsp green chilli paste
1 tbsp red chilli powder
1 tbsp roasted cumin powder
500 gms.curd (Dahi)
4 tsp sugar (optional)
Tamarind and jaggery chutney (optional)
Salt to taste.

Soak uraddal for at least 6 to 8 hours.
Blend it properly, add ginger, green chilli, and make a thick paste. Add salt and mix well. Add water as little as possible.
Take a frying pan, add oil, heat it.
Add little batter with help of spoon, if it swims on the oil, it means oil is ready to begin frying vadas.
Drop 4 to 5 vadas with help of spoon. Keep the flame medium.
Turn it around after sometime. Let it fry patiently otherwise it will remain uncooked from inside.
Take a bowl, fill almost half with water.
Add fried vadas in that water, let it rest there for 5 minutes.
Meanwhile, add another lot of vadas and repeat the same procedure. Add all vadas same way into the water.
After 5 minutes take out vada by squeezing it with hands and place them in a serving bowl.
Once all vadas are ready, refrigerate them.
Take curd, add red chilli powder, roasted cumin, sugar and salt.
Mix everything well and refrigerate.

While serving, take 3 vadas in a bowl & pour chilled curd on it.
Sprinkle red chilli powder, roasted cumin, and salt on it.
You can also garnish with green chutney red chutney and corriander leaves.
