Today’s recipe is Khichdi Thepla.
Thepla is a very popular gujrati delicacy, and is also a
whole meal in itself. It is not surprising to find a gujrati family travelling with
a heap of theplas, it’s a beloved recipe.
There are various types of Theplas, as I have mentioned in
an earlier post. Today I am going to write about Theplas made of khichdi.
As khichdi is also a favourite among gujratis, we often overestimate our eating
capacity, and cook much more than required.
Hence, we make theplas from the leftover Khichdi.
INGREDIENTS:
1 cup khichdi,
4 tbsp oil,
1 cup wheat flour,
½ tsp hing (asafoetida),
½ tsp turmeric,
½ tsp red chilli powder,
1 tsp ginger paste,
½ tsp garam masala,
Salt to taste.
Take a big bowl and mix wheat flour with 2 tbsp oil. Add
khichdi to the mixture, along with khichdi, turmeric, hing, chilli powder,
ginger paste, garam masala and salt to taste. Make a proper dough.
Let it rest for about 5-10 minutes. Now make 12 equal balls
of dough & roll them using a rolling pin. Take a non stick tawa and heat it
for a few minutes. Lay the rolled Thepla on it and let it cook for sometime and
then flip it. Sprinkle oil on the thepla and flip it again. Repeat on the other
side.
Cook all the theplas in the same manner. Just ensure that
you do not flip it more than thrice otherwise it will lose its softness.
This is an easy, simple & quick recipe. It is very
delicious and the theplas are very soft. You can have it with tea as a snack or
also with pickle or yogurt as a whole meal.
