Today's recipe is Dhokla
INGREDIENTS:
2 cup rice
1/4 cup arhar dal / turdal
1/4 cup moong dal
1/4 cup urad dal
3 tbsp oil
1/4 tsp mustard
1/4 tsp cumin seeds
1/4 tsp turmeric
1/2 tsp red chilli powder
1/2 tsp sesame seeds
Chopped corriander
Salt to taste.
Soak rice and dals atleast for 7 to 8 hours. Churn rice and dal separately to make a smooth paste then mix both thoroughly.
Pour the mixture in a big vessel and cover by placing a lid on it. Put some weight on the lid. Keep it in a slightly warm place overnight for fermentation.
Open lid in the morning and add salt to the mixture and stir vigorously.
Pour some water in a big vessel and bring it to boil.
Take a dish, sprinkle some oil. Pour some mixture on it and spread it equally on the whole dish.Sprinkle some red chilli powder on it.
Place this dish in the big vessel and cover it with a lid. Let it steam for atleast 15 minutes.
Check it with knife. If it comes out clear dhokla is properly steamed. Keep it aside for sometime for it to cooldown then make small pieces. Steam all the other Dhoklas the same way.
Take a pan and heat it. Add oil, heat it.
Add mustard, hing cuminseeds and sesame seeds and curryleaves. Add all steamed dhoklas to pan and stir it. Put lid on it.
Let it cook for some time. Stir and cover with lid again. Let it cook for another 5 minutes on medium flame.
Your delicious dhokla is ready. Serve the dhokla in a serving dish, garnished with chopped corriander. Serve hot.
You can have it with chutney or ketchup. Its a full meal in itself.
