Sambhar

Today's recipe is Sambhar

INGREDIENTS :
1 cup pigeon peas ( toordal or Arhardal)
1 piece drumstick
1 brinjal
1/2 cup chopped pumpkin
1 chopped onion
2  tbsp oil
1 tbsp tamarind juice
1 tsp turmeric
1 tsp chilli powder
1 tbsp sambhar masala
1/4 tsp fenugreek(methi)
1/4 tsp mustard
5/6 curry leaves
1/2 tsp uraddal
1/4 tsp hing(asafoetida)
Salt to taste
Boil the pigeon peas with pieces of drumstick, brinjal, pumpkin and onions. Let it rest for about 10 minutes.
Now add 1 tbsp tamarind juice. If you do not have tamarind, you may also use lemon. Add turmeric, chilli powder, sambhar masala and salt to taste. Let it boil for 5 to 10 minutes.
Now take a pan and add oil to it, & heat it. Add fenugreek, mustard seeds, curry leaves and hing/ asafoetida. Lastly, add uraddal. Add this to sambhar. Let it boil for 5 more minutes and tasty sambhar is ready.
One thing I'd like to mention here is cooking has a lot of variety. If you don't have any of these Ingredients, except the main ingredients and salt, you can carry on without it. The taste may vary, but won't taste bad.
