This time I took longer break since
I wanted to write some thing very simple but at the same time, delicious. Today I am writting about a Gujrati sweet, SHRIKHAND.
Todays' recipe is Shrikhand
INGREDIENTS:
1 Kg. Plain curd
300g Sugar
1/2 tsp Cardamom powder
Few strands of Saffron.
2/3 Almond and Pistachio for garnishing.(optional)
Take a washed clean cloth spread curd on that and leave it for 2/3 hours to let water drain.
Take a strainer, add little curd and sugar and strain it. Again repeat process till whole curd and sugar gets strained.
Take little water in small cup and add saffron to it and soak it for about 2/3 minutes. Once water turns saffron in colour, add it to the curd. Also add cardamom, mix everything thoroughly. The Curd will turn saffron in colour .Garnish with almond and pistachio flakes. Delicious shrikhand is ready.
Shrikhand is very popular with Gujratis. Generally it is made in summer and served chilled.
If you are out of india you can buy greek yogurt and confectioners' sugar, or icing sugar . Mix it adding cardamom powder and saffron and its done.
You can make your own variations by adding fruits in place of cardmom and saffron.
