Brinjol mutter subji

How are you all? You all are must be busy with routine after a long vacation. We too enjoyed a lot.
Let me come to today's recipe.

Brinjol mutter sabji.

INGREDIENTS:
250g Brinjol
1/2 cup mutter
2 tbsp oil
1/4 tsp.hing/asafoetida
1/2 tsp termeric
1/2 tsp red chilli powder
1 tsp dhaniajeera powder
Salt to taste

Chop brinjol and keep it aside.
Take a pan,add oil,heat it.
Add hing,termeric.Now add chopped brinjol and salt to taste. Let it cook for 5 minutes.
Add mutter, stir everything properly and cover with lid. Let it cook for 10 minutes, stirring occasionally. Add red chilli powder and dhaniajeera powder. Let it cook for 2 mins with high flame.
You can see excess oil coming out. Take out excess oil with spoon and use that oil for next day's vegetable.

If you have iron kadai then make this subji in iron kadai. That will turn subji to black in colour. In INDIA in Gujrat many love this black brinjol subji.

In winter we make this black subji with bajari rotla and black urad dal. This is famously called black set.
