Today's recipe is Ragda patties

Ragda patties is a dish of mashed potatoes patties and white peas gravy. This dish is part of the street food culture in India.

Ingredients:

250 gms. Dried White peas
500 gms potatoes..(5 /6 in numbers)
100 gms green peas
150 gms onions (3 pieces)
150 gms tomatoes (3 pieces)
2 tbsp oil
2 tsp turmeric
2 tsp red chili powder
1 tsp sugar
1 tsp garam masala
1 lemon
1 cup sev
Salt to taste.


1. Soak dried white peas for 4 to 5 hours

2. Boil soaked white peas, potatoes and green peas.

3. Blend 2 onions and 2 tomatoes in blender.

4. Add 2 tbsp oil in a pan, add Tamal patra, hing turmeric and red chili powder. Add onion tomato puree in it. Add garam masala. Salt as per taste. Cover with lid.

5. Make thick gravy.

6. Add boiled white peas in it.

7. Mix properly and cover it with lid.

8. let it cook for 10 minutes on simmer. Stir it occasionally.

Lets make patties now

9. Peel boiled Potatoes, mash it.

10 . Add turmeric, red chilli powder, sugar, lemon , garam masala and salt to taste. Add boiled peas, after crushing with hands. Also you can add ginger, but it is absolutely optional.

11. Keep it aside at least for 15 minutes.

12. Make 15 to 18 balls from Potato and green peas mixture.

13. Put non stick tava on flame and let it heat. Sprinkle oil on tava.

14. Take one ball in hand press little between two palms.

15. Cover it with suji. Put that ball to middle of the tava. Same way make another three patties and shallow fry it.

16. Once cooked from one side turn it to other side. After a minute shift all 4 patties to border of the tava and add another lot of 4 patties in middle of the tava. When those patties are also done, shift it to tava border and so on...

17. Shallow fry all patties, the fun is that when you want to eat this patties, they all are hot.

18. Chop remaining onion and tomato.

19. It has typical style of serving.

20. Put two patties in bowl, pour hot ragda on it. Add green, sweet and garlic chutney on it. Sprinkle cut onion, tomatoes and sev on it.
If you are fond of green coriander then you sprinkle that also , but I am giving it skip.


21. Simply very tasty, mouth-watering street food.
