Today's recipe is Dabeli.
Dabeli is very famous street food of Gujrat. They use local bun, called pav. It looks like Burger but tastes totally different.
Dabeli Masala
Ingredients:
2 tsp whole coriander
1 tsp cumin seeds
1 tsp red chili powder
2 tsp cinnamon powder
2 clove
3 tsp black pepper
Dabeli
Ingredients:
8 bun
3 tbsp butter
500 gms boiled potatoes
2 tbsp Dabeli masala
1/2 cup sweet chutney
1/2 cup green chutney
1/2 cup masala peanuts
1/2 cup nylon sev
1/2 cup chopped green coriander
1/2 cup pomegranate seeds
A) Make Dabeli Masala Powder
Except red chili powder, roast everything till it turns light brown. Let it cool, grind it. Add red chili powder , mix well. Dabeli masala is ready.
B) Make Dabeli stuffing
Take a frying pan, add butter, let it heat, add hing and cumin seeds, add ginger chilli paste and turmeric roast it for some time, add chopped tomatoes, roast it. Add chopped potatoes, salt and Dabeli masala. Cook for 5 minutes and stuffing is ready.
C) How to make Dabeli.
1. Cut bun from Centre as one side of bun remains attached.
2. Butter both side of bun and put it on hot tava. Roast bun from both sides.
3. Open bun from middle, spread green and sweet chutney both the side. Now stuff stuffing with spoon, put 1 tsp masala peanuts, 1 tsp sev, 1 tsp chopped green coriander and 1 tsp pomegranate seeds. Close bun and press it little. Add butter, roast it for few seconds both the side.
4. Serve hot Dabeli with sweet chutney and Green chutney.
