Today's recipe is Coconut dates laddu.
This is my Aunt's recipe and I give her full credit for this.
These laddus, while being nutritive, are also sugar free, and glutenfree too.
Desiccated coconut is finely grated, dried, unsweetened form of coconut, obtained by drying shredded or ground kernel. It is used as a substitute to raw grated coconut in confectioneries, desserts like puddings, cookies, cakes, pastries, and other food preparations.
Dates are a good source of iron and also provide Instant energy,
help Prevent Night Blindness,
Help Control Cholesterol Levels,
Help In Controling Blood Pressure etc.
INGREDIENTS:
250 gms Dates
1 cup Desiccated Coconut
1/2 cup dry fruits (grated)
1/2 cup sesame seeds
2 tbsp ghee.
Take a pan, add ghee, heat it. Add dates and stir continuously for a minute.
Add 2 tbsp water, mix properly and let it cook for 3 minutes with a lid.
In another pan roast Desiccated coconut and sesame seeds saparately. Let it cool down.
When everything has cooled down , mix a half of the coconut with sesame seeds and grated dry fruits. Mix properly for a minute or 2. Make 6 balls out of this and roll them in remaining coconut.
Coconut dates ladoo is ready.
It is very healthy, tasty and full of iron.
