Today's recipe is Lemon rice, it is easy and very tasty solution for left over rice.
You may use fresh cooked rice too. This is south indian recipe. Easy and quick to cook. If you have all ingredients its just 10 minutes job.
Lemon rice
INGREDIENTS:
2 cups cooked rice
2 tbsp oil
1/4 tsp hing (asafoetida)
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1 tbsp urad dal
1 tbsp chana dal
Curry leaves
2 tbsp lemon juice
1 tsp grated ginger
1 green chilli ( slit horizatally)
Salt as per taste.
Take a deep pan, add oil, heat it. Add mustard seeds, when it starts bursting, add cumin seeds, add hing, add urad dal and chana dal. Mix everything. Add ginger paste. Add green chilli and Stir continuously. Add rice and salt to taste. Add lemon juice ,stir carefully and continuously. Do not cook more than 5 minutes. Switch off the flame and cover with lid for 5 minutes.
Rice will absorb lemon juice and it will give it typical sour taste.
Tasty Lemon rice is ready.
You can have this rice in breakfast or in lunch.
