Stuffed Capsicum

Hope you all are fine.
Today's recipe is Stuffed Capsicum
INGREDIENTS:
4 Capsicum
3 potatoes
1/4 tsp red chilli powder
1/4 tsp turmeric
1/4 tsp corriander cumin powder
1/4 tsp sugar
1/2 lemon
3 tbsp oil
1/4 tsp hing (asafoetida)
Salt to taste

Take potatoes, boil them, peel them, and mash them.
Add turmeric, red chilli powder, sugar, lemon juice and salt. Mix everything properly and keep aside.
Take capsicum, cut it from below and empty the seeds.
Fill the potato mixture into the empty capsicums one by one.
Take a pan, add 3 tbsp oil, add hing, and add the four capsicums one by one. Stir it carefully. Cover with a lid and allow it to cook for 5 minutes on simmer flame.
Turn the flame off, open the lid and let it cool down for a few minutes, then place it into a serving bowl. Garnish with a pinch of red chilli powder, corriander cumin powder and salt.

This can be served as a side dish with any menu.
