Samosas

Today’s recipe is Samosas
INGREDIENTS:
2 cups maida
5 potato
1/2 tsp jeera(cumin seed)
1/2 tsp ajwain(carom seeds)
1/4 tsp hing(asafoetida)
1 tsp Garam masala
1/2 tsp turmeric
1/2 tsp red chilli powder
Salt to taste
Oil for frying

Take a pan and add maida. Add carom seeds, salt, and knead a firm dough. Keep aside while keeping it covered with wet cloth.
Boil potatoes and peel them off.
Cut small pieces, add turmeric, red chilli powder, garam masala and salt. Mix everything thoroughly.
Take a pan add some oil, heat it and add jeera. Add the potato mixture. Mix  properly and cover it with a lid.
Let it cook for 5 minutes. Turn the flame off and allow it to cool down.
Make six equal balls from the maida dough. Roll it like a roti. Cut it in two from centre with help of a knife or a pizza cutter. Make cones out of it and fill the potato mixture in it, then seal it with help of little water.
It will have a conical shape.
I would suggest, make all six rotis at a time then make con one by one and fill it.
Take frying pan, add oil and heat it.
When you feel oil is hot enough to fry, add two to three samosas and start frying. Add samosa in hot oil but then lower the flame and fry it. Otherwise airpokets will appear on its outer layer.
If you are not sure whether oil is alright or not, simply drop a small piece of dough in it, if it comes up quickly oil is warm enough.
Fry all the samosas in the same way.
You can serve it with green chutney and sweet chutney acompanied by hot ginger or masala tea.
Try this recipe. Two samosas are enough for anybody for lunch or dinner and its yummy in taste.
