Hi everyone,
Today’s recipe is one of the most delicious, mouth watering snack,
Panipuri!
INGREDIENTS:
¼ cup suji/semolina
¼ cup maida
1 tps salt
Pinch of baking soda
4 potatoes
1 tsp panipuri masala
1 cup choped Coriander
1 cup choped Mint leaves
1 tsp Black salt
2 tbsp lemon juice
5 / 6 green chillies
1 cup Sweet chutney
1/2 cup namkin bundi.
1/2 cup boiled black chana
3 cups oil for frying.
Add semolina, maida, a pinch of soda and salt in a bowl.
Mix everything well, then add water and knead the dough, but little soft. Cover it with wet cloth.
Let it rest for at least 20 to 25 minutes.
Make three balls out of the dough, then start rolling the same.
Roll it like a chapati, not too thin but not too thick.
Start cutting small puris with the help of a cutter.
If you do not have a cutter, use small katori (bowl) for cutting purpose.
Place the rolled puri on a wet cloth then cover with wet cloth.
Roll the other two balls in the same way and cut the puries.
Now, take a frying pan, add oil, heat it till you see a slight smoke.
Add 5/6 puries , now turn the flame to low. Flip puries and again let it cook for sometime.
Take them out and Place on a sheet of paper to let the extra oil get soaked. Fry all puries similarly.
(If you find it difficult to make puries or don't have time for the same you can buy readymade puries from market.)
Take potatoes and black chana in a bowl. Mash them. Add salt, 1 tsp panipuri masala and remainder of stainer.Mix everything and Keep aside.
Soak some bundi in water and keep aside.
Take a dish, place six puries in the dish. Make a tiny hole and fill the potato mix and soaked bundi in it. Add sweet chutney(recipe already on blog)Add panipuri’s flavoured water to it and enjoy.
It will take maximum 2 hours to make this recipe but I say its worth.
