This time I took little long vacation. Yes it was vacation, first my dear Mumbai and then heaven on earth, Kashmir.

Today’s recipe is not really for students as I know they will not attempt this but I’ve got yet another simple and quick recipe, one for Gujrati snacks ‘Gathia’ so thought of posting it here.
Bhavnagri gathia
Very simple and quick recipe of Gujrati snacks.
This is my mom's recipe. She use to make it quite often when we were young.
INGREDIENTS
2 cup Besan (gram flour)
1/2 cup oil
1 tsp salt
1/2 tsp soda
1 tsp ajwain (optional)
3 cups oil for frying
Add oil to a frying pan and put it on simmer. Do not heat oil on fast gas, otherwise when we start adding gathia they will turn red. To make proper yellow coloured gathia you must be careful with the gas flame. It should be on simmer.
Take Besan in a big bowl & add oil. Mix thoroughly. Add salt and ajwain. Take half cup water add soda in it and knead dough with that water. Make a stiff dough. Now shift whole dough on one side and take some in middle of the bowl and start mashing it with water. Make it soft enough so I t can easily pass through the zari (special spoon which we use for frying puri or other food)
See if the oil is ready, set one zari on kadai and rub softened dough on it. You will see gathia falling in to kadai.
After 3-4 seconds turn to the other side. Let it cook for sometime then take it out. Take care that gathia should not burn or become red. It should be yellow in colour.
Make all other gathias the same way.
This is Gujarati favourite snack.
You can have it with tea, coffee or just as it is with finely chopped onion and tomatoes.
Its delicious either way.
