Today's recipe is Pav vada.
Vada pav is a Maharastrian delicacy. Very famous with people of all age grould as well as class.
I remember when we use to go to Lonavala for short trips, we would always take a halt at Dutt guru pav vada centre for its famous hot and tasty pav vada.
Another one is Ramakant which is situated at Khapoli. When we take the old route, we pass by Ramakant. Their vada pav and bhajias are very famous.
INGREDIENTS
10 Pav
6 potato
1/2 tsp mustard
1/2 tsp hing
2 tsp turmeric
2 tsp red chilli powder
1 tsp garlic paste
1 tsp garam masala
1 tsp sugar
1 lemon
2 green chillies, finely chopped( optional)
Some corriander leaves.
2 cup besan/gram flour
3 cups oil for frying
Salt to taste.
Boil Potatoes and keep it aside to cool down.
Take a bowl ,add besan, turmeric, chilli powder and salt. Mix everything well. Now add water to make a semi solid dough.
Peel the potatoes and mash them. Add turmeric, red chilli powder, sugar, lemon juice, garam masala and salt to taste. Mix everything well.
Now take a pan and add oil, let it heat, then add mustard, hing and curry leaves.
Now add the whole mixture to the pan and stir thoroughly. Keep lid on and let it cook for 5 minutes after which, turn the flame off.
Let it cooldown. Add corriander and Finely chopped green chillies. Mix it again. Make10 round balls out of this potato mixture.
Take a deep pan ,add oil and heat it.
When you see it has heated enough, add potato ball after dipping in to besan dough.
Add at least three to four in one lot.
Let it fry at medium flame. Make all vadas in the same way. Delicious potato vada is ready.
Now take a pav, slice it from the centre and spread garlic chutney, green chutney and sweet chutney. Sandwich the vada in the pav and have it with or without ketchup.
It is sooooo tasty its difficult to stop after one.
It is quite easy to make so anyone, anywhere can make it. My not-an-accomplished-cook daughter is successfully making it in scotland.
It is simple, quick and very yummy tastewise.
